Quick Cobbler

¼ cup softened butter Preheat oven to 375 F. Cream together the butter and ½ cup sugar until fluffy; set aside. Sift together the flour, baking powder and salt; add to the creamed mixture alternating with the milk then beat until smooth. Put into an 8 or 9 inch square pan or a 2 quart casserole dish. Spoon the drained fruit evenly over the batter then sprinkle with 1/3 cup sugar. Gently pour the fruit juice over all. Bake at 375 F for 45 to 50 minutes. During the baking the fruit will go to the bottom and a cake like layer will form on top. Serve warm with ice cream or cool and serve with ice cream. This recipe will serve six.
